- 1 pkgmackerel in organic olive oil

- 1 pkgtoast bread
- 3 tbspbutter
- 2 tbspoil
- 1 cucumber
- 1 red onion
- 1Preheat the oven to 225 °C and line a baking tray with baking paper.
- 2Wash the potatoes, cut them into pieces, and spread them out on a baking tray. Drizzle with oil, season with salt, pepper, and potato seasoning, then mix well. Place the tray in the oven and bake for about 25 minutes.
- 3Drain the tuna, place it in a bowl, and mix with mayonnaise. Season with salt, black pepper, and lemon juice, then mix well.
- 4Rinse the spinach in a colander under cold water and let it drain.
- 5Cut the avocado in half, remove the pit, and slice the flesh.
- 6Spread the tuna spread on each slice of toast bread. Add avocado and spinach, then top with another slice of bread.
- 7Heat butter and oil in a pan over medium-high heat. Place the sandwiches in the pan and toast them on both sides until golden. Cut them into two triangles.
